1. Mushroom & Barley Soup –

Who doesn’t love mushrooms? Add them to a bowl full of vegetable broth along with super nutritious barley, and what you have is a perfect dinner recipe for a cosy winter night. Here’s how to get started.

Ingredients for Mushroom & Barley Soup:

¼ cup Barley
½ cup dried Mushroom
2 cups Vegetable broth
1 tablespoon olive oil
Vegetables – Chives, Celery, Onion, Carrot
Salt & Pepper to taste

How To Prepare Mushroom & Barley Soup :

Heat Olive oil in a soup pot, add vegetables and let it cook until soft. Add mushrooms, vegetable broth along with the barley and let it cook for another 10 minutes. Keep stirring until the soup is blended and the vegetables are cooked well. Add salt and pepper as per taste.

Pro Tip: You can replace the mushrooms with chicken or even add to it along with the mushrooms!

2. Mixed Vegetable Spiced Soup:

This one’s so easy and super quick! The mixed vegetable soup is a mixture of your favourite and healthy vegetables that are soul-soothing and super filling. If you’re not on a strict diet, compliment this one with some toast or bread sticks.

Mixed Vegetable Spiced Soup Ingredients:

1 tablespoon Olive Oil
1 cup Mushrooms
½ cup Quinoa
Vegetables – Tomatoes, Zucchini, Carrot, Onion
Spices – Cinnamon, Nutmeg, Curry powder, Broth cube
Salt & Pepper to taste
4-5 cups of water

How To Prepare Mixed Vegetable Spiced Soup :

Heat Olive oil in a soup pot. Add onion and let it saute for a couple of minutes. Add other vegetables such as tomatoes, mushrooms, zucchini, carrot and let it cook for about 5-6 minutes. On the side, add water and mix the spices in it. Add this mixture along with Quinoa to the veggies and let it cook gently for 15-20 minutes. Once cooked, stir well and add salt and pepper as per taste.

3. Spiced Tomato Soup

There are these days when one just doesn’t want to experiment too much. One such soup recipe is the tomato soup recipe. We’ve all had our memorable times with this bright red soup garnished with some basil and the extreme comfort you get, just cannot be expressed in words.  Here’s how you can make this classic one, for the times when you want to treat yourself.

Ingredients for Spiced Tomato Soup:

5-6 cups of Water
5-7 Tomatoes
1-2 Carrot
1 Onion
1-2 Celery
1 tablespoon Olive Oil
Salt & Pepper and other spices to taste

How To Prepare Spiced Tomato Soup :

Add 5-6 cups of water in a saucepan/soup pot. Add a teaspoon of salt and let the water boil. Add tomatoes to the water and make sure they are completely immersed in the hot water. Let them immerse for about 25 minutes. Drain the water and start peeling the tomatoes. The next step is to chop them in a blender. Blend it well to make it into a smooth puree. In a saucepan, add olive oil and let it heat. Add finely chopped onion, carrot, followed by the puree and celery in the end. Stir well. You may add more water, salt, pepper and any other spices as per your liking. And that’s done!

4.Red Lentil Surprise

Want to skip the regulars and cook something that’s as healthy as soup, but doesn’t feel like a soup? It is this one. One of the simplest ones to stir-up is the Red Lentil soup. Cook them into a soup, stew or a curry, it’ll all be ready in a jiffy! Top this up with some shredded Parmesan cheese for some indulgence that you’ve earned! Here’s how.

Ingredients for Red Lentil Surprise:

1 tablespoon Olive Oil
Vegetables – Onion, Carrot, Celery, Tomatoes
Spices: Cumin seeds, Turmeric, Cinnamon, Garlic, Paprika
2-3 cups Vegetable Broth
2 cups Water
2 cups Red Lentil
Lemon juice as per taste

How To Prepare Red Lentil Surprise (Soup):

Heat olive oil in a large soup pot and add onions, carrot, celery and saute it for about 4-5 minutes. Add garlic, coriander, cumin, turmeric, paprika, cinnamon, and let the vegetables get infused with the flavours of the spices for a couple of minutes. Then add the broth, tomatoes and the red lentils. Let the mixture boil well till the lentils are cooked and become tender. Garnish as you wish and add lemon juice as per taste.
